Food has been on my mind a lot lately due to watching a lot of food network.  I’m still thinking about the fine meal at the Pacific’s Edge  in Carmel a few weeks ago.  On that trip to Carmel, I also had a good breakfast at the hotel.  I had eggs benedict, which I enjoy a lot, but never have it unless we go out for breakfast or on vacation.  I love eggs, but egg benedicts is something we have never tried at home.  Seems too much trouble to poach eggs.  So, when I do have egg benedicts, it is a treat.  If you want to give it a try, here is a recipe from the food network.  Here is a picture to get your appetite going for the weekend.  If you go out for breakfast this weekend, and find a good egg benedict, let me know.
